Lemon-obsessed and looking for fresh ideas, esp for breakfasts (my fav), I present to you the humble pot of lemon curd. Thick, creamy and tart, it is the perfect topper for a breakfast bowl or tea treat. So simple and quick, give it a go (adjust honey quantity to taste).
Lemon Curd - Paleo and Refined-Sugar Free

COOK TIME // 10 minutes
QUANTITY // Filled two ramekins

Ingredients //
3 Eggs // 1/3 cup Honey // zest of 1.5 Lemons // juice of 1.5 Lemons // 7 tbs Coconut Oil // crack of Salt
Instructions //
*Place all ingredients in a small pot on the stove
*Whisk continuously
*I turned the heat to high until it started to thicken and then turned it to medium heat once it started to bubble. It varies depending on stove so keep your eye on it
*Once thick, remove from heat and sift into a bowl
*Transfer into ramkins, pots or teacups and cover with cling film/clear wrap
*Refrigerate until set
Best served on a spoon straight out the pot. Just kidding (or am I?) - delectable, tart spread for scones, pancakes, toast or to drizzle atop smoothie bowls, granola or oatmeal. The list seems endless.
